Ingredients

  • 4 pieces chicken breasts boneless, skinless
  • 1 container Boursin cheese herb-flavored
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme or fresh thyme if available
  • to taste salt and pepper

Equipment

  • Baking dish or casserole dish
  • Chef's knife
  • Cutting board
  • Measuring spoons
  • Stirring spoon or spatula

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease your baking dish to prevent sticking and set aside.
  2. Pat the chicken breasts dry with paper towels, then season them generously with salt, pepper, and dried thyme on both sides.
  3. Heat olive oil in a skillet over medium-high heat until shimmering, then sear the chicken breasts for about 2-3 minutes per side until they develop a light golden color.
  4. Remove the chicken from the skillet and place them in your prepared baking dish, arranging them so they don't overlap.
  5. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, stirring continuously to avoid burning.
  6. Pour the garlic into a small bowl and then mix it into the Boursin cheese until smooth and well combined.
  7. Spread the herbed Boursin mixture evenly over each chicken breast, covering them generously for a creamy, cheesy coating.
  8. Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden around the edges.
  9. Remove the dish from the oven and let it rest for 5 minutes to allow the cheese to set slightly and the flavors to meld.
  10. Garnish with extra herbs if desired, then serve the Boursin Chicken hot, spooning any melted cheese from the dish over the top for added richness.

Notes

For a lighter option, you can use less cheese or substitute part of it with Greek yogurt. Serve with steamed vegetables or a simple salad for a complete meal.
