- Heat a tablespoon of olive oil in a large skillet over medium heat until shimmering.
- Add the gnocchi in a single layer and cook undisturbed for about 3-4 minutes, until the bottom is golden brown. Flip and cook another 3-4 minutes to crisp up all sides, then transfer to a plate.
- In the same skillet, add the chicken pieces and season with salt and pepper. Sauté for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
- Reduce the heat to medium and add the minced garlic to the skillet with the chicken. Cook for about 30 seconds until fragrant, stirring constantly to prevent burning.
- Add the butter to the skillet and let it melt, coating the chicken and garlic evenly. Continue to cook for 2-3 minutes until the butter begins to brown slightly and creates a fragrant garlic butter sauce.
- Return the crispy gnocchi to the skillet, tossing everything together gently to coat the gnocchi and chicken with the garlic butter. Let cook for another 2 minutes so the flavors meld and the gnocchi reheat.
