  • 4 cloves garlic, minced fresh is best
  • 2 tablespoons olive oil
  • 1/4 cup pineapple juice fresh or canned
  • 1 pinch salt to taste
  • 1/4 teaspoon black pepper

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat until shimmering and just starting to smoke.
  2. Add the shrimp to the skillet in a single layer, listening for a sizzle as they touch the hot oil, and cook for about 2 minutes until they start to turn pink and opaque around the edges.
  3. Sprinkle salt and black pepper over the shrimp, then add the minced garlic, stirring gently to coat each piece and release a fragrant aroma. Continue cooking for another 1-2 minutes, watching the garlic turn golden and fragrant.
  4. Pour in the pineapple juice, which will sizzle as it hits the hot pan, and scrape up any browned bits from the bottom to incorporate deep flavor.
  5. Cook the shrimp in the liquid for another 2-3 minutes, allowing the sauce to thicken slightly and the shrimp to become fully opaque and tender.
  6. Remove the skillet from heat, give everything a gentle toss to coat the shrimp evenly in the sauce, and let it rest for a minute to absorb all those vibrant flavors.
