Ingredients

  • 1 lb ground beef or other meat of choice
  • 1 packet taco seasoning or homemade spice blend
  • 4 corn tortillas About 6-inch size
  • 1 cup shredded cheese cheddar, Monterey Jack, or blend
  • 1 cup salsa or pico de gallo for topping
  • 1 cup shredded lettuce optional, for garnish
  • 1 small red onion finely chopped, optional
  • 2 tbsp olive oil for cooking meat
  • to taste salt and pepper

Equipment

  • Skillet
  • Baking sheet
  • Broiler or oven
  • Cooking spatula
  • Knife
  • Cutting board

Method

  1. Heat a skillet over medium heat and add olive oil. Once shimmering, add the ground beef and cook, breaking it apart with a spatula, until fully browned and no longer pink. Stir in the taco seasoning and a splash of water, simmer until the mixture thickens and becomes fragrant.
    1 lb ground beef
  2. While the beef cooks, stack the corn tortillas and cut each stack into four wedges to form pizza slices, or leave whole if preferred. Place the tortillas on a baking sheet lined with parchment paper for easy cleanup.
    1 lb ground beef
  3. Preheat your oven to 375°F (190°C). Spread a spoonful of the cooked seasoned beef over each tortilla or tortilla wedge, creating an even layer.
    1 lb ground beef
  4. Sprinkle shredded cheese generously over the beef layer on each tortilla. This will melt during baking to create a gooey top.
    1 lb ground beef
  5. Bake the assembled Mexican pizzas in the preheated oven for about 8-10 minutes, or until the cheese is melted and bubbling with golden edges.
  6. Remove the baking sheet from the oven and let the pizzas cool slightly. Then, broil on high for an additional 1-2 minutes to achieve crispy edges and a bubbly top—watch closely to prevent burning.
  7. Transfer the baked Mexican pizzas to a serving platter. Top with fresh salsa and chopped red onion for added flavor and color.
    1 lb ground beef
  8. Garnish with shredded lettuce if desired, then slice into wedges and serve hot, enjoying the crispy, cheesy, savory bites.

Notes

For extra flavor, add sliced jalapeños or a squeeze of lime before serving. You can also substitute ground turkey or plant-based meat for a different twist.
