Preheat your oven to 375°F (190°C). In a large mixing bowl, gently toss the peeled and sliced peaches with half of the sugar and lemon juice until evenly coated. Transfer the peach mixture to a baking dish, spreading it out evenly.
In another bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Mix well to distribute the ingredients evenly.
Add the cold butter pieces to the dry ingredients. Use a pastry cutter or fork to cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces. This helps create a flaky, crunchy topping.
Sprinkle the crumble mixture evenly over the peaches in the baking dish, covering all the fruit surface. Gently press down the topping to help it stick together.
Place the baking dish in the preheated oven and bake for about 35 minutes, or until the topping is golden brown and bubbling around the edges. You’ll smell the cinnamon and toasted butter as it bakes.
Remove the crumble from the oven and let it cool slightly for 10 minutes. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
