Ingredients
  

  • 3 pounds Pork shoulder roast or pork loin for leaner option
  • 2 cups Apple cider preferably unfiltered or cloudy for flavor
  • 4 cloves Garlic minced
  • 1 tablespoon Fresh sage chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Olive oil for searing

Method
 

  1. Pat the pork roast dry with paper towels. Rub it all over with salt, pepper, and chopped sage to flavor the meat.
    3 pounds Pork shoulder roast, 1 tablespoon Fresh sage, 1 teaspoon Salt, 1/2 teaspoon Black pepper
  2. Heat a tablespoon of olive oil in a large skillet over medium-high heat until shimmering. Place the pork roast in the pan and sear it for about 4-5 minutes on each side until golden brown and caramelized.

  3. Transfer the seared pork to the slow cooker. Pour the apple cider over the top and add the minced garlic around the roast.

  4. Set the slow cooker to low and cook uncovered for 5-6 hours, until the pork is tender and easily falls apart when tested with a fork.
  5. Remove the pork from the slow cooker and place it on a serving platter. If desired, skim any excess fat from the cider sauce and simmer it for a few minutes to thicken slightly.
  6. Slice or shred the pork as preferred and spoon some of the reduced cider sauce over the top, allowing the flavors to soak in before serving.

Notes

For a richer flavor, you can add sliced apples during the last hour of cooking. Serve with your favorite sides like mashed potatoes or roasted vegetables.
