- Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
- Peel, core, and slice the apples into thin, even pieces. Toss them in a mixing bowl with lemon juice, sugar, and half of the cinnamon until well coated.
- Spread the coated apples evenly into the prepared baking dish, creating a uniform layer.
- In a separate bowl, combine the oats, nuts (if using), brown sugar, remaining cinnamon, and vanilla extract. Mix well to distribute the dry ingredients.
- Add the melted vegan butter or coconut oil to the dry mix, stirring until it forms a crumbly texture that sticks together lightly.
- Sprinkle the oat mixture evenly over the apples, covering them completely and pressing down slightly to help it adhere.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
- Remove from the oven and let it cool slightly for about 5 minutes. Serve warm, perhaps with a scoop of plant-based vanilla ice cream or a dollop of coconut whipped cream for extra indulgence.
