Warm Spiced Chia Breakfast Pudding

This chia pudding combines soaked chia seeds with fragrant cinnamon and ground cardamom, creating a creamy, stretchy dessert-like dish that thickens as it sits. The final texture is smooth and custard-like, with tiny chia seeds adding a chewy, nutty burst in every spoonful, and the appearance is a speckled, pudding-like consistency.

Method

  1. Add the milk to a small saucepan and place it over low heat.
  2. Stir in the ground cinnamon and ground cardamom until evenly distributed.
  3. Add the chia seeds and stir well to prevent clumping.
  4. Cook over low heat for 5 to 7 minutes, stirring frequently, until the mixture thickens slightly.

  6. Remove the saucepan from heat once the pudding reaches a soft, spoonable consistency.
  7. Let it rest for 2 minutes before serving to allow final thickening.

For a creamier pudding, use evaporated or coconut milk. Adjust the sweetness to taste. This dish can be prepared the night before for a quick and easy breakfast.
